Oatmeal Cake with Brown Butter Icing
Ingredients
THE CAKE, HEAT
- 1 ½ Sticks unsalted butter (12 Tbsp.)
- 1 ½ cups Water
- 1 cup Old-fashioned rolled oats
- 1 ¼ cups Granulated sugar
- ¾ cup Packed brown sugar
- 3 Eggs
- 1 tsp. Vanilla extract
WHISK
- 2 cups All-purpose flour
- 1 tsp. Baking soda
- 1 tsp. Table salt
- 1 tsp. Ground cinnamon
- ¾ cup Raisins
THE ICING, MELT
- 4 tbsp. Unsalted butter
- Chopped pecans
- 1 ½ cups Powdered sugar
- 1 tsp. Ground cinnamon
- Pinch of table salt
- 2 tbsp. Milk
- 1 tsp. Vanilla extract
Instructions
- Preheat oven to 350°. Coat a 9×13-inch baking dish with nonstick spray.
The Cake
- Heat 1½ sticks butter and water in a saucepan until they boil. Pour boiling liquid over oats and let sit 5 minutes. Stir in granulated sugar, brown sugar, eggs, and 1 tsp. vanilla.
- Whisk together flour, baking soda, 1 tsp. salt, 1 tsp. cinnamon, and raisins; stir flour mixture into oat mixture and pour into prepared dish. Bake cake until a toothpick inserted in the center comes out clean, 30–35 minutes.
The Icing
- Melt 4 Tbsp. butter in a small skillet over medium heat. Cook butter until brown flecks appear in the bottom of the skillet, 10–12 minutes. Pour browned butter into a bowl.
- Beat powdered sugar, 1 tsp. cinnamon, and pinch of salt into butter with a mixer. Beat in milk and 1 tsp. vanilla until smooth. Spread icing on warm cake and top with pecans.
