Ingredients

LIME SIMPLE SYRUP, HEAT

  • ½ cup Water
  • ½ cup Sugar
  • Pinch of salt
  • ½ cup Fresh lime juice

THE CUCUMBER-MINT JUICE, PURÉE

  • 4 cups Chopped English cucumbers
  • 2 cups Fresh mint

THE COOLER, COMBINE

  • 2 cups Soju
  • Crushed ice
  • Chilled club soda

Instructions

  • For the lime simple syrup, heat water, sugar, and salt in a small saucepan over medium until sugar dissolves. Set pan in a bowl of ice water to cool syrup. Once cool, stir in lime juice.
  • For the cucumber-mint juice, purée cucumbers and mint in a blender or food processor. Strain mixture through a fine-mesh sieve, pressing to extract as much juice as possible; discard solids.
  • For the cooler, combine Soju, lime simple syrup, and cucumber-mint juice in a pitcher. Serve cooler in ice-filled glasses and top with a splash of club soda.
