Ingredients
LIME SIMPLE SYRUP, HEAT
- ½ cup Water
- ½ cup Sugar
- Pinch of salt
- ½ cup Fresh lime juice
THE CUCUMBER-MINT JUICE, PURÉE
- 4 cups Chopped English cucumbers
- 2 cups Fresh mint
THE COOLER, COMBINE
- 2 cups Soju
- Crushed ice
- Chilled club soda
Instructions
- For the lime simple syrup, heat water, sugar, and salt in a small saucepan over medium until sugar dissolves. Set pan in a bowl of ice water to cool syrup. Once cool, stir in lime juice.
- For the cucumber-mint juice, purée cucumbers and mint in a blender or food processor. Strain mixture through a fine-mesh sieve, pressing to extract as much juice as possible; discard solids.
- For the cooler, combine Soju, lime simple syrup, and cucumber-mint juice in a pitcher. Serve cooler in ice-filled glasses and top with a splash of club soda.
