  • 1 cup Fresh or frozen corn kernels, thawed if frozen
  • ½ cup Halved grape tomatoes
  • ½ cup Minced red onion
  • ¼ cup Minced fresh cilantro
  • 3 tbsp Fresh lime juice
  • 1 Jalapeño, seeded and minced
  • Salt and black pepper to taste


  • Toss together corn, tomatoes, onion, cilantro, lime juice, and jalapeño; season relish with salt and pepper. Cover and chill relish until ready to use, or up to 4 hours.
