Ingredients
COOK
- 2 Strips thick-sliced bacon, diced
- 1 lb 1 lb. red-skinned potatoes, cubed
STIR IN
- ⅓ cup Heavy cream
- 3 Tbsp Unsalted butter
- 1 Tbsp Chopped fresh chives
- Salt and black pepper to taste
Instructions
- Cook bacon in a 12-inch cast-iron skillet until crisp. Transfer bacon to a paper-towel-lined plate, drain drippings, and wipe out skillet.
- Cook potatoes in same skillet of boiling salted water until fork-tender; drain and return to skillet. Cook potatoes over medium heat, stirring to remove excess moisture, 1 minute
- Stir in cream and butter, crushing potatoes with a potato masher until they reach desired consistency. Stir in chives and bacon; season with salt and pepper.
