Plum Trifles with Amaretti Cookies
The trifle is a delicious English dessert which here is a nice way to cook it with plums and amaretto

Ingredients
HEAT
- ½ cup Dry red wine
- ¼ cup Honey
- Pinch of salt
- 1 ½ lb. Fresh plums, sliced
- ¼ tsp. Pure almond extract
ASSEMBLE
- 4 oz. Chopped amaretti cookies (such as Lazzaroni)
- 1 cup Vanilla yogurt
- 1 cup Slivered almonds, toasted
Instructions
- Heat wine, honey, and salt in a saucepan over medium-high to a boil. Add plums, reduce heat to medium-low, and simmer until softened, 4–5 minutes; stir in almond extract, then transfer to a bowl and chill until cold. Strain plums through a sieve, reserving wine mixture.
- Assemble trifles by placing about 1 Tbsp. wine mixture in the bottom of six parfait dishes. Top with half the cookies, half the plums, and a heaping 1 Tbsp. each yogurt and almonds; repeat process once more.
