Plum & Cherry Shrub Punch

Ingredients
PEEL
- ½ Lemon
CRUSH
- 1 Small plum, chopped
- 2 oz. Fresh sweet cherries, chopped
- ⅓ cup Sugar
- ⅓ cup Red wine vinegar
COMBINE
- ½ cup Vodka
- 2 cups Club soda, chilled
- Crushed ice
Instructions
- Peel lemon with a vegetable peeler (do not include white pith).
- Crush plum, cherries, lemon peel, and sugar in a glass bowl; let sit 30 minutes. Stir in vinegar, cover, and refrigerate at least 48 hours.
- Strain shrub through a fine-mesh sieve, pressing solids to extract as much juice as possible. Discard solids.
- Combine shrub, vodka, and club soda; serve over ice.
