Ingredients
COMBINE
- 1 ½ cups Whole milk
- 1 cup Heavy cream
- ½ cup Light corn syrup
- ¼ tsp. Table salt
BEAT
- 3 Egg yolks
- ¼ cup Sugar
STIR IN
- 2 cups Coarsely chopped fresh yellow peaches
- 2 tbsp. Peach Schnapps, optional
- 1 tsp. Fresh lemon juice
- ⅛ tsp. Pure almond extract
Instructions
- Combine milk, cream, corn syrup, and salt in a saucepan; bring to a simmer over medium-low heat.
- Beat yolks and sugar in a bowl with a hand mixer on high speed until thick and pale yellow. Gradually beat 1/2 cup milk mixture into yolk mixture, then whisk back into pan.
- Stir in peaches and cook over low heat, stirring constantly, until mixture coats the back of a spoon, 5–8 minutes; do not allow mixture to boil. Stir in Schnapps, lemon juice, and almond extract. Cool peach mixture in an ice water bath until very cold (or refrigerate until cold).
- Churn peach mixture in an ice cream machine according to manufacturer's instructions, 15–20 minutes. Transfer ice cream to a container, seal, and freeze overnight.
