Ingredients
THE CRUST, PRESS
- 2 pkg. Refrigerated cinnamon rolls (such as Pillsbury Grands; 17.5 oz. each), separated, reserve icing
THE FILLING, STIR
- 1 lb. Frozen peaches, thawed, chopped, and drained
- ⅛ tsp. Ground nutmeg
- ⅛ tsp. Kosher salt
- ½ tsp. Ground cinnamon
- 1 tsp. Fresh lemon juice
- 2 tsp. Cornstarch
- ¼ cup Packed light brown sugar
- ¼ cup Granulated sugar
THE TOPPING, COMBINE
- 3 tbsp. Packed light brown sugar
- 2 tbsp. Granulated sugar
- ½ tsp. Ground cinnamon
- ⅛ tsp. Kosher salt
- 3 tbsp. Unsalted butter, melted
- ½ cup All-purpose flour
Instructions
- Preheat oven to 400°. Lightly coat a 12-cup muffin pan with nonstick spray.
The Crust
- Press cinnamon rolls into and up sides of muffin cups.
The Filling
- Stir together peaches, brown sugar, granulated sugar, cornstarch, lemon juice, cinnamon, nutmeg, and salt. Divide filling among crusts.
The Topping
- Combine brown sugar, granulated sugar, cinnamon, and salt. Stir in melted butter, then stir in flour until mixture forms moist clumps; sprinkle over pies.
- Bake pies until bubbly and topping is golden, 13–15 minutes. Cool pies in pan 5 minutes, then transfer to a cooling rack.
- Heat reserved icing in microwave just until pourable, 10–15 seconds; drizzle over pies.
