Jungle Bird Cocktail

This classic tiki cocktail originated in the Aviary Bar in Kuala Lumpur and was named after the birds you could see through a glass panel while facing the stage. Many tiki drinks are so sugary, they’re a bit off-putting. But the Jungle Bird, with its bitter component, Campari, cuts the sweetness in this cocktail.

Today, of course, you can get a Jungle Bird—a quasi-tiki combination of rum, pineapple, lime juice, sugar and Campari—at most any cocktail bar.

  • Lime Juicer
  • Glass Liquid Measuring Cups
  • 18 x 24-Inch Plastic Cutting Board
  • 10" Chef's Knife

Ingredients

  • ¾ cup Dark rum
  • ¾ cup Pineapple juice
  • ½ cup Fresh lime juice
  • ½ cup Simple syrup
  • 6 tbsp. Campari
  • Crushed ice
  • Pineapple wedges, lime slices, and maraschino cherries

Instructions

  • Combine rum, pineapple juice, lime juice, simple syrup, and Campari in a pitcher; chill until ready to serve.
  • Divide Jungle Bird among four glasses filled with crushed ice; garnish with pineapple, lime, and cherries.
