Ingredients

WHISK

  • 3 tbsp. Fresh lemon juice
  • 1 tbsp. Olive oil
  • 2 tsp. Honey
  • 2 tsp. Dijon mustard

COMBINE

  • 2 Jars segmented pink grapefruit in water (19. 5 oz. each), drained
  • 1 English cucumber, halved lengthwise and chopped (about 3 cups)
  • ¼ cup Shaved red onion
  • ¼ cup Chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  • Whisk together lemon juice, oil, honey, and Dijon for the vinaigrette.
  • Combine grapefruit, cucumber, onion, and parsley in a bowl with vinaigrette; season with salt and pepper.
