Ingredients

WHISK

  • 2 tbsp. White wine vinegar
  • 1 tbsp. Minced leeks
  • 1 tbsp. Olive oil, extra-virgin
  • 2 tsp. Pure maple syrup
  • 1 tsp. Dijon mustard
  • 1 tsp. Prepared horseradish

TOSS

  • 2 Strips thick-sliced bacon, sliced
  • 4 cups Chopped curly endive

Instructions

  • Cook bacon in a saucepan until crisp; transfer to a paper-towel-lined plate and reserve for Curly Endive Salad, right. Reserve drippings in pan.
  • Whisk together vinegar, leeks, oil, maple syrup, Dijon, and horseradish for the vinaigrette.
  • Toss endive and bacon with vinaigrette; season with salt and pepper
