Ingredients

WHISK

  • 1 Egg yolk
  • 1 Tbsp. Fresh lemon juice
  • 1 tsp. 1 Dijon mustard
  • 1 tsp. Chopped fresh dill
  • 1 tsp. White wine vinegar
  • 1 tsp. Sugar
  • ½ cup Olive oil

BLANCH

  • 14 Asparagus spears, trimmed

DIVIDE

  • 4 oz. Cold-smoked salmon or Nova lox
  • 1 cup Croutons
  • ½ cup ½ cup fresh watercress
  • Black pepper to taste

Instructions

  • Whisk together egg yolk, lemon juice, Dijon, dill, vinegar, and sugar for the dressing; slowly drizzle in oil until incorporated.
  • Blanch asparagus in a pan of boiling salted water until crisp-tender, about 3 minutes. Drain asparagus and pat dry.
  • Divide salmon, asparagus, croutons, and watercress between two plates; season with pepper. Drizzle dressing over salads.
